
I have been craving brussels sprouts for over a week now.  As fate would have it, every time I went to the store.....two different stores two different times they did not have any.  Poo.  But yesterday they did have some in stock!!!  I gleefully bought a pound and then began to day dream about how I would cook these wonderful little veggies.
 I decided to cut them in half and toss with red onion, balsamic, a splash of olive oil and some freshly grated parmesan.  I let it all sit for a little bit so that the brussels would absorb the liquid and then spread it all out on a baking sheet and roasted them for about 20 minutes!
