broccoli

I love me some broccoli. So do BOTH of my girls. It must be a genetic thing because they seriously love broccoli.....they will eat their broccoli before pretty much any other food. I give this broccoli recipe an enthusiastic 2 thumbs up. It is tangy and sweet and the cashews add a perfect little crunch. I'm always looking for ways to add a little spice to the foods that we eat, cause really, plain steamed broccoli is good, but broccoli with buttery garlic sauce and cashews is even better!!


Ingredients:
  • 1 1/2 pounds fresh broccoli, cut into bite size pieces
  • 3 tablespoons butter
  • 1 tablespoon brown sugar
  • 3 tablespoons soy sauce
  • 2 teaspoons white vinegar
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1/3 cup chopped salted cashews
Directions:
  1. Place the broccoli into a large pot and steam until tender but still crisp. Drain, and put broccoli in a mixing bowl
  2. While the broccoli is cooking, melt the butter in a small skillet over medium heat. Add garlic and saute until fragrant. Mix in the brown sugar, soy sauce, vinegar and pepper. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli and toss to coat. Serve immediately.
For a healthier dish substitute:
Extra virgin olive oil for butter
Splenda brown sugar for regular brown sugar
Light or low sodium soy sauce for regular soy sauce
