dandelions: fun and nutritious

Nothing says spring quite as well as dandelions. We have then all over our yard! Everyday we pick the fluffy, white seed heads and take turns blowing them into the wind. We gather the yellow flowers into bouquets and cart them around the yard in buckets. Everyday we pick dandelions and everyday we come back outside and there are dozens more to pick and enjoy. Did you know that dandelion greens are edible? It is best to harvest in early spring and late fall while there are no flowers. You can use the greens in salads, saute them and even pickle them. They do have a bitter flavor, so cooking them with sweet vegetables cuts the taste. Also, the yellow part of a dandelion flower is edible as well! It's good to know that we could survive on eating our lawn if we needed to! :o)

Nice to know since Abbie is obsessed with them...we go for a walk every day to pick them. Except she calls them "blowers"! I'm so impressed with all the food changes you are making...I'm lucky if I can get my kids to eat bread/water for dinner!!
